When Gbemi at Dubai fit foodie posted the recipe for plantain pancakes on her blog, I thought, wow I had to try this. I’m a big fan of plantain in all forms; roasted, boiled, fried, in porridge, everything! So armed with a bunch of plantains, a new recipe joined the group.
Tweaked the recipe a little and added some onions to the mixture for flavor and etc., just can’t do without them. The pancakes were a tad too much so I had a number of leftovers.
Couldn’t take any pictures therefore we’d make do with hers which are way more appetizing than mine :).
I’d be facing more food experiments soon and if you have plantains, you really should try this.

That’s so nice. I once made almond oat pancakes. Didn’t have the foresight to take pictures of the process or the end result though. Also made a version of Latkes. Blended though, instead of grated.
